Mix the hard-boiled egg (chop up) and lemon juice in a bowl. Add the oil drop by drop, constantly stirring, until the mass thickens.
Add the remaining oil spoon by spoon, constantly stirring (with a mixer or hand blender). Peel and squeeze the garlic and add to the mayonnaise.
Season the sauce with salt, pepper, and a dash of vinegar.
