Black Bean Burgers

Step 1

In a small skillet, heat 1 tablespoon of the oil over medium heat. Add the garlic and onion and cook 5 minutes or until softened. Transfer the onion mixture to a food processor.

Step 2

Add the flour, paprika, beans, parsley, breadcrumbs, thyme, and salt and pepper to taste. Process until well combined, leaving some texture.

Step 3

Shape the mixture into 4 equal patties and refrigerate for 20 minutes.

Step 4

In a large skillet, heat the remaining 2 tablespoons oil over medium heat. Add the burgers and cook until browned on both sides, turning once, about 6-7 minutes per side.

Step 5

Serve immediately on rolls with tomato slices and lettuce.
