French-Style Potato Salad

Step 1

In a large pot of boiling salted water, cook the potatoes until tender but still firm, about 30 minutes.

Drain and cut into 1⁄4-inch slices. Transfer to a large bowl and add the parsley, chives, and tarragon. Set aside. In a small bowl, combine the oil, vinegar, salt, pepper, and sugar. Pour the dressing onto the potato mixture and toss gently to combine.

Step 3

Taste, by adjusting the seasonings, if necessary. Chill for 1 to 2 hours before serving.
