Directions

Step 1

Heat the oil in a skillet, sauté the onions, add the asparagus and cook until crispy. Season with pepper and salt and set aside.

Step 2

Grease the cups and divide the eggs and vegetables between them. Top with cheese and bake in a preheated oven at 380 F for about 27-31 minutes, or until the top browns.
