Add flour and salt to the mixing bowl and immediately add prepared water. Knead the dough by hand until there are no lumps.
Leave the dough to rest for 17 minutes.
Dust the working surface with flour. Divide the dough into 2 equal parts and shape them into pie crusts. Each crust should be about half the thickness of a human finger, in the shape and size of the chosen baking pan.
Grease the pan with a tablespoon of oil and add the first crust, grease its surface and add another crust. Let them rest for another 20 minutes. Start stretching them from the center and do not stick fingertips deep into the dough. Fill with the pumpkin filling.
Bake at 360 F for about 40 minutes, until the crust has a nice golden color. Serve!
