Greek Thanksgiving Turkey

10-12 pound turkey

2 chopped onions

2 teaspoon chopped fresh parsley

1 chopped stalk of celery

1 teaspoon chopped fresh dill

2 tablespoon butter

3/4 pound peeled roasted chestnuts

1 pound ground beef

Coarsely chopped liver from turkey

1/4 pound finely chopped Pignoli nuts

1/2 cup white raisins

1 pound mild breakfast sausage

1/4 cup white rice

1/2 cup dry red wine

1 cup water

2 tablespoon tomato paste

1 pound white bread crumbs

Salt and pepper to taste


Brown the onions and the celery in butter. Add liver, beef, and sausage. Cook until brown and add wine, the tomato paste, and herbs. Simmer until the meat is tender. Add the nuts, raisins, and rice. Stir in water and cook covered, until the rice is done. Mix in the breadcrumbs and season to taste. Stuff loosely into the turkey.
