Step 1

Preheat the oven at 450 F.

Step 2

Add garlic cloves to a foil sheet, fold the foil edges to a make a rough box, and drizzle a tablespoon of olive oil on top.

Step 3

Roast the garlic for 15 minutes until golden brown in color. Remove the roasted garlic from the oven and allow it to cool. Squeeze the garlic flesh out of the peel and transfer to a blender.

Step 4

Add garbanzo beans, lemon juice, salt, cumin, and 1 tablespoon olive oil. Blend well until smooth and serve.
